What is there to do in Australia during their winter

What is there to do in Australia (Melbourne, Sydney, Brisbane, and Cairn area) during their winter?
Besides Carin, which is much warmer, there doesnt seem to be much to do in Australia during their winter. There is VIVID Sydney, but thats only late May to mid June.
