Graduating college in April and I have 8 months off before I start with my employer

Im 21 years old from the northeast US, graduating college in April 2016 and Ive signed an offer for a well-paying job that starts in January 2017… so that gives me about 8 months off before I start. I figure I have a once in a lifetime opportunity to do something really out there during that time off, but Im struggling to decide what to do. I love to travel (Ive solo backpacked europe and Bolivia previously) but I dont have nearly enough money to last me that long without working… so Im looking for some ideas from you adventurous people about what I could potentially do. I love to hike, climb, snowboard, and scuba dive so going somewhere that I could do one or more of those things would be pretty great. I do have about $7k saved up from last summer that could get me a flight and give me some flexibility. Ive tossed around the idea of moving somewhere cool (Anchorage, Denver, Australia, New Zealand?) and getting a temporary job but Im not sure what kind of job would fit the bill. I know this is very broad, but Im hoping some other people have had similar experiences and might have some cool ideas or advice. Thanks!

edit: I also have an old 4wd car, so if I were to stay in North America I could drive there… thought that might be relevant.
